Thai cucumber salad

Ingredients for the dressing:

⅓ cup rice vinegar
2 Tbsp sugar
½ tsp toasted sesame seeds
¼ to ½ tsp red pepper flakes
½ tsp salt

Ingredients for the salad:

2 large cucumbers
3 green onions
¼ cup chopped peanuts


Blend the dressing & drizzle on cucumbers & onions. Mix well & spread peanuts on it.

Watermelon salad

Ingredients for dressing:

2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
1 tablespoon rice vinegar
1 tablespoon light soy sauce
½ teaspoon Sriracha
½ teaspoon freshly grated ginger
salt and pepper to taste

Salad preparation:

4 cups watermelon cubed
1 cucumber cubed
½ cup mint leaves, coarsely chopped
½ cup basil leaves, torn
¼ cup roasted peanuts, chopped
Mix well & drizzle the dressing on top

Thai mango salad

Ingredients for salad:

1/3 cup roasted peanuts
2 raw mangoes julienned
1/3 cup chopped fresh coriander
1/3 cup chopped mint
2 tablespoons lime juice
4 teaspoons granulated sugar
4 teaspoons light soy sauce
1 tablespoon vegetable oil
1/4 teaspoon Sriracha sauce
1/4 teaspoon chilli garlic paste
1 red pepper thinly sliced
1 cup thinly sliced red onion (optional)


Mix lime juice, sugar, soy sauce, oil, sriracha & garlic paste.
Toss raw mango, coriander, mint, peppers & onions well.
Mix in salad sauce & top with peanuts. Serve cold.

*Thailand mangoes are little sweet so this salad tastes great. In India you can use little hard ripe mango instead of fully raw.
